Brittle Bones

Make on a cold, clear day/night*

* * * *

Ingredients:

* * * *

1/4 cup water

1/2 cup light Karo syrup

1 cup granulated sugar

2 cups raw peanuts, shelled

1 tsp baking soda

Note: Before you begin, fill sink half full of hot soapy water, prepare greased cookie sheet and place measured soda on a napkin. This moves fast! No time to wander off.

In a black cast-iron skillet, boil water, syrup, and sugar. Add nuts and cook until about 6 to 8 nuts make a popping sound. Immediately remove from heat and add soda. Stir well and quickly pour onto greased pan. Toss skillet into suds for easy cleanup. Take cookie sheet outside and leave for 15 minutes before checking for brittleness. (I often use my freezer since it's outside. A deck rail is fine if the wind isn't blowing.)

* If the air is damp, brittle will be sticky.

Once brittle has set, snap into small pieces and enjoy.
